The third location of the Coyote Coffee mini-chain has opened at Demachiyanagi, with a logo that reflects... the long-standing stand-off between coyotes and European settlers in the Americas.
Just a month after opening, they installed their own 15 kg roaster from Easyster, made in Korea; before that, the 'coyotes' rented equipment from Okafe. Now, the coffee goes almost directly ‘from bean to cup’, bypassing the long chain of 'wholesaler – exporter – importer – wholesaler – roaster.'
The café's design was done by Team Clapton, though some of the work was completed in a DIY format. In addition to the natural colours of wood and concrete, the interior features shades of indigo (aizome), popular both in El Salvador (the origin of their coffee) and in Japan.
