Nicolai Bergmann is a Danish florist and entrepreneur, one of the most recognizable floral designers in Japan. His brand, Nicolai Bergmann Flowers & Design, covers floristry, design projects, corporate installations, and the lifestyle café NOMU — a play on words combining the Japanese 飲む (nomu, “to drink”) and the Danish restaurant NOMA.
There are two NOMU locations in Tokyo: one in Aoyama (opened December 3, 2010) and the second in the Azabudai Hills complex (opened November 24, 2023). The latter is located on the B1F floor of Tower Plaza, adjacent to the flower shop, within a unified floral space. The interior, seasonal arrangements, and overall atmosphere are built entirely around fresh flowers, which are present throughout the café as well. Bergmann personally oversees the interior and menu, so these cafés can be considered a natural extension of his aesthetic.
In addition to desserts, there is also a proper kitchen: Danish dishes made with Japanese ingredients — sourdough rye bread, dips, Danish cheese, and seasonal jams. If you’re coming for a quick bite, it’s best to visit in the morning or at lunchtime — by evening, all the sandwiches usually sell out, leaving only desserts. Overall, true to its name, this café is mainly about drinks: single-origin specialty coffee from Overview Coffee [@overviewcoffeejapan] (medium roast for espresso, medium-light for filter) and matcha latte from Nodoka [@nodoka_tea].
